This vibrant hash bowl brings crispy turkey bacon to the forefront, balanced by roasted sweet potato cubes, fluffy egg whites, a whole egg, and protein-packed black beans, all nestled atop a bed of fresh spinach. It’s a hearty mix of textures and flavors, ideal for any meal of the day.
INGREDIENTS
3 slices Turkey Bacon (30g)
150 grams Sweet Potato
1 large Egg
4 Egg Whites
1/4 cup Black Beans
1 cup Spinach
PREPARATION
Preheat your oven to 400°F.
Peel and dice the sweet potato into small cubes, toss with a tiny drizzle of olive oil, salt, and pepper, then spread on a baking sheet.
Roast the sweet potato cubes in the oven for about 20-25 minutes or until tender and slightly crispy on the edges.
Meanwhile, cook the turkey bacon in a skillet over medium heat until it becomes crispy. Once done, set aside on paper towels to drain.
In a nonstick pan, sauté the spinach lightly until just wilted. Add the rinsed black beans and warm through for about 2 minutes.
Separate the egg whites from a whole egg. Scramble the egg whites in a small nonstick skillet until just set, and in a separate pan, fry the whole egg to your preference.
Assemble the bowl by layering the roasted sweet potatoes as the base, then add the sautéed spinach and black beans. Top with scrambled egg whites, place the crispy turkey bacon on one side, and gently nestle the fried egg on top.
Serve immediately while hot.
