PREPARATION
Preheat a non-stick skillet over medium heat and add 1.5 tablespoons of olive oil.
Dice the red bell pepper and tomato, and roughly chop the spinach.
Pour the 5 egg whites into a bowl and lightly whisk them with a pinch of salt if desired.
Add the diced bell pepper and tomato to the heated skillet and sauté for about 2 minutes until slightly softened.
