INGREDIENTS
5 oz Lean Ground Turkey
2 Egg Whites
1 cup Sliced Mushrooms
1 cup Fresh Spinach
1/2 cup Chopped Bell Pepper
1/4 medium Onion, diced
1 tbsp Olive Oil
2 tbsp Fresh Herbs (Parsley & Thyme)
Salt and Pepper, to taste
PREPARATION
Warm the olive oil in a large skillet over medium heat.
Add the diced onion and sauté until it becomes translucent, about 2-3 minutes.
Stir in the sliced mushrooms and chopped bell pepper, cooking until the mushrooms are soft and the vegetables begin to tenderize, around 4-5 minutes.
Add the lean ground turkey to the skillet, breaking it apart with a spatula until cooked through and lightly browned, approximately 6-7 minutes. Season with salt and pepper.
Pour in the egg whites and sprinkle in the fresh herbs, stirring gently to combine all ingredients and allowing the egg whites to cook, which takes about 2 minutes.
Fold in the fresh spinach and continue to cook briefly until the spinach wilts, about 1 minute.
Taste and adjust seasonings if necessary, then serve hot.
