Creamy Cauliflower Grits with Spicy Garlic Shrimp
A vibrant twist on classic grits, where creamy, blended cauliflower replaces traditional cornmeal to create a buttery, satisfying base. Topped with spicy garlic shrimp sautéed in olive oil with a hint of chili, this dish offers a bold flavor profile with a perfect balance of heat and savory goodness.
INGREDIENTS
7 oz Shrimp
1 cup chopped Cauliflower
1/4 cup Unsweetened Almond Milk
1 tbsp Nutritional Yeast
2 tsp Olive Oil
2 cloves Garlic
1/4 tsp Chili Flakes
Salt and Pepper to taste
PREPARATION
Pat the shrimp dry and season lightly with salt, pepper, and chili flakes.
In a non-stick skillet, heat 1 tsp olive oil over medium heat. Add minced garlic and sauté until fragrant.
Add the shrimp and cook for about 2-3 minutes per side until pink and cooked through. Remove the shrimp from the pan and set aside.
Meanwhile, steam or microwave the cauliflower until very tender.
In a blender, combine the steamed cauliflower, unsweetened almond milk, nutritional yeast, and the remaining 1 tsp olive oil. Blend until smooth and creamy. Season with salt and pepper to taste.
To serve, spoon the creamy cauliflower grits onto a plate and top with the spicy garlic shrimp. Garnish with additional chili flakes if desired.
