INGREDIENTS
1 piece (120g) Chicken Breast
1 large Egg White (33g)
0.25 cup (30g) Whole Wheat Breadcrumbs
0.25 cup (60g) Tomato Sauce
0.5 ounce (14g) Parmesan Cheese
1 handful Fresh Basil & Parsley
PREPARATION
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Pat the chicken breast dry. Lightly coat it with the egg white in a shallow dish.
Spread the whole wheat breadcrumbs on a plate, season with a pinch of salt and pepper, and press the chicken into the breadcrumbs to form an even coating.
Place the breaded chicken on the prepared baking sheet and bake for 20 minutes.
Remove the chicken from the oven, spoon a thin layer of tomato sauce over the top, and sprinkle with grated Parmesan cheese.
Return the chicken to the oven and bake for an additional 5 minutes, or until the cheese is slightly melted and bubbly.
Garnish with freshly chopped basil and parsley before serving.
