INGREDIENTS
350g Extra Firm Tofu
75g Shelled Edamame (approx. 1/2 cup)
100g Cooked Brown Rice (approx. 1/2 cup)
1 Medium Carrot
1/4 Cucumber
2 Green Onions
1 tsp Sesame Seeds
1 tsp Sesame Oil
1 tsp Fresh Ginger, minced
1 Clove Garlic, minced
1 tbsp Low-Sodium Soy Sauce
1 tbsp Rice Vinegar
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture. Then cut the tofu into cubes.
Preheat your oven to 400°F. Toss tofu cubes with a splash of low-sodium soy sauce, a bit of sesame oil, and a light dusting of sesame seeds.
Place tofu on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway through until the pieces are crispy and golden.
While the tofu bakes, prepare the rice according to package instructions if not already cooked.
Steam or quickly blanch the shelled edamame until tender-crisp.
Prepare the sesame ginger dressing by whisking together the remaining sesame oil, minced ginger, garlic, low-sodium soy sauce, and rice vinegar.
Chop the carrot, cucumber, and green onions into bite-sized pieces.
Assemble the bowl by layering the brown rice, edamame, and fresh vegetables. Top with the crispy baked tofu and drizzle the dressing evenly over the bowl.
Finish by sprinkling a few extra sesame seeds over everything. Enjoy your nutritious and flavorful sesame ginger tofu rice bowl.
