Enjoy a beautifully crisp herb-crusted salmon paired with a garlicky sauté of fresh zucchini and mushrooms. This dish melds the savory flavor of pan-seared salmon with aromatic herbs and a burst of garlic and lemon, offering a balanced and light meal perfect for any time of day.
INGREDIENTS
6 oz Salmon Fillet
1 medium Zucchini
1/2 cup sliced White Mushrooms
2 Garlic Cloves
1 tsp Olive Oil
2 tbsp Chopped Fresh Herbs (Parsley & Dill)
1 tsp Lemon Zest
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt, pepper, and half of the chopped fresh herbs along with lemon zest to create a fresh herb crust.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and pan-sear for about 3-4 minutes until a crispy crust forms.
Flip the salmon and cook for another 3 minutes until the fish is cooked through but still moist. Remove the salmon from the skillet and set aside.
In the same skillet, add olive oil and toss in sliced garlic, cooking for about 30 seconds until fragrant.
Add the sliced zucchini and mushrooms. Sauté for 4-5 minutes until the vegetables are tender but still crisp. Season with salt, pepper, and the remaining fresh herbs.
Plate the garlic sautéed zucchini and mushrooms as a bed and place the herb-crusted salmon on top. Drizzle any remaining pan juices over the fish for added flavor. Serve immediately.
