1 tbsp Olive Oil
2 cups Fresh Spinach
2 cloves Garlic
2 tbsp Lemon Juice
½ cup Cherry Tomatoes
Salt & Pepper to taste
Pinch of Red Pepper Flakes
PREPARATION
Bring a pot of salted water to a boil. Add the whole wheat pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving a splash of pasta water.
In a large one-pan or skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant, about 30 seconds.
