1 medium Sweet Potato
1/4 cup Black Beans
1/4 cup Diced Tomatoes
2 tbsp Red Onion
1 tsp Chili Powder
1 tsp Cumin
1 tsp Garlic Powder
1 Green Onion (optional garnish)
PREPARATION
Preheat your oven to 400°F. Wash the sweet potato and poke a few holes with a fork.
Bake the sweet potato on a baking sheet for about 45 minutes or until tender. Once done, allow to cool slightly.
While the sweet potato is baking, heat a non-stick skillet over medium heat. Add the red onion and sauté for 2 minutes until softened.
