PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Break the cauliflower into florets and steam or microwave until very tender (about 5-7 minutes). Once cooked, allow it to cool slightly, then process or mash it until a rice-like consistency is achieved.
In a large bowl, combine the mashed cauliflower, two beaten eggs, almond flour, grated Parmesan cheese, minced garlic, dried herbs, and a pinch of salt and pepper. Mix thoroughly until a dough forms.
Transfer the mixture onto the prepared baking sheet and press into a rectangular shape about 1/4 inch thick. Score lightly with a knife into breadstick shapes.
