INGREDIENTS
4 oz Chicken Breast
1 cup Romaine Lettuce
1/3 cup Chickpeas
1 tbsp Grated Parmesan Cheese
1 tbsp Light Caesar Dressing
1 tbsp Lemon Juice
1 tsp Mixed Dried Herbs
1 tsp Garlic Powder
PREPARATION
Preheat your grill or grill pan to medium-high heat.
Season the chicken breast with mixed dried herbs and garlic powder, and lightly drizzle with lemon juice.
Grill the chicken for about 6-7 minutes per side or until fully cooked. Allow it to rest for a few minutes before slicing.
Meanwhile, drain and pat dry the chickpeas. Toss them with a pinch more of garlic powder and herbs, then roast them in a preheated 400°F oven for 15-20 minutes until they’re crispy.
In a large bowl, combine chopped romaine lettuce with the light Caesar dressing and a splash more lemon juice.
Slice the grilled chicken into strips and toss into the salad.
Top the salad with the crispy chickpea croutons and a sprinkle of Parmesan cheese.
Serve immediately and enjoy the crunchy and zesty flavors.
