Roast the broccoli in the preheated oven for about 10-12 minutes until tender and slightly crispy.
If your quinoa isn’t pre-cooked, rinse 1/3 cup quinoa under cold water, then simmer it in water (using a 2:1 water to quinoa ratio) for 15 minutes until fluffy.
To assemble, plate the cooked quinoa as a base, place the grilled salmon over the top, and arrange the roasted broccoli alongside.
Finish with a squeeze of fresh lemon juice over the salmon and broccoli for an extra burst of flavor.
