Crispy-Skin Sweet Potato with Greek Yogurt and Chives
Enjoy a comforting dish that highlights the natural sweetness of a perfectly crisped sweet potato skin paired with creamy, tangy Greek yogurt and bright, fresh chives. This dish balances textures and flavors, making it an ideal meal for any time of day.
INGREDIENTS
1 medium Sweet Potato (114g)
1 cup Plain Nonfat Greek Yogurt (245g)
1 large Egg (50g)
1 tsp Olive Oil (4.5g)
2 tbsp Fresh Chives (6g)
PREPARATION
Preheat your oven to 425°F.
Wash the sweet potato thoroughly, pat dry, and prick several times with a fork. Rub with olive oil and sprinkle with a pinch of salt (if desired) to help crisp the skin.
Place the sweet potato on a baking sheet and roast in the oven for 40-45 minutes until tender on the inside and the skin is crispy.
While the sweet potato is roasting, prepare a poached egg by bringing a pot of water to a simmer and gently sliding the egg into the water. Poach for 3-4 minutes or until the whites are set.
Once the sweet potato is done, carefully slice it open lengthwise. Fluff the inside with a fork and add a generous dollop of Greek yogurt.
Top with the poached egg and sprinkle freshly chopped chives over the dish. Enjoy the combination of warm, crispy sweet potato skin, cool creamy yogurt, and rich poached egg.
