INGREDIENTS
400g Extra-Firm Tofu
1 cup Chopped Broccoli (91g)
1 medium Red Bell Pepper (119g)
0.5 cup Snap Peas (50g)
1 small Julienned Carrot (50g)
1 tbsp Fresh Grated Ginger
2 cloves Minced Garlic
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Honey
1 tsp Toasted Sesame Seeds
PREPARATION
Press the tofu to remove excess moisture and cut it into 1-inch cubes.
In a bowl, whisk together rice vinegar, low-sodium soy sauce, honey, and grated ginger to create the glaze.
Heat sesame oil in a non-stick skillet over medium-high heat. Add the tofu cubes and sauté until all sides are golden and crispy.
Remove tofu from the skillet and add minced garlic. Sauté briefly until fragrant, then add chopped broccoli, sliced red bell pepper, snap peas, and julienned carrot.
Stir-fry the vegetables for about 3-4 minutes until they are crisp-tender.
Return the crispy tofu to the skillet and pour the prepared glaze over the tofu and vegetables. Toss gently to coat evenly.
Cook for an additional 1-2 minutes, allowing the glaze to thicken slightly and adhere to the tofu and vegetables.
Sprinkle toasted sesame seeds over the dish before serving. Enjoy your flavorful, nutrient-packed meal!
