Enjoy a vibrant twist on the classic Caesar salad with perfectly grilled chicken, crisp romaine, and a unique crunch from baked chickpea croutons. Fresh herbs and a light Caesar dressing bring all the flavors together for a nutritious and satisfying meal.
INGREDIENTS
4 oz Chicken Breast
2 cups Romaine Lettuce
1/4 cup Crispy Chickpea Croutons
2 tbsp Light Caesar Dressing
1 tbsp Shaved Parmesan Cheese
1 tbsp Fresh Lemon Juice
1 tbsp Fresh Herbs (parsley/thyme)
PREPARATION
Marinate the chicken breast by drizzling with the fresh lemon juice and sprinkling chopped fresh herbs. Allow it to sit for at least 15 minutes.
Preheat your grill to medium-high heat. Grill the chicken breast for about 6-7 minutes per side until fully cooked and internal temperature reaches 165°F.
While the chicken is grilling, rinse and chop the romaine lettuce into bite-sized pieces and transfer to a large mixing bowl.
Prepare the crispy chickpea croutons by lightly tossing chickpeas with a pinch of herbs and spices, and if desired, a very small drizzle of olive oil. Bake them in a preheated oven at 400°F for about 15 minutes until crispy.
Slice the grilled chicken into strips and add to the bowl with the romaine lettuce. Drizzle the light Caesar dressing over the top.
Sprinkle the baked chickpea croutons and shaved parmesan cheese over the salad. Toss gently to combine all the flavors.
Serve immediately and enjoy your nutrient-packed, flavorful meal.
