4 oz Chicken Breast
2 medium Zucchinis
2 tsp Olive Oil
2 Tbsp Parmesan Cheese
1 clove Garlic
1 tsp Mixed Dried Herbs
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Place the chicken breast on a baking sheet. Drizzle with 1 tsp olive oil, sprinkle with salt, pepper, and half of the mixed dried herbs. Roast in the oven for 20-25 minutes or until fully cooked and juices run clear.
While the chicken is roasting, spiralize the zucchinis to form noodles. If you don’t have a spiralizer, use a vegetable peeler to create long ribbons.
In a large skillet over medium heat, add the remaining olive oil and sauté the minced garlic until fragrant, about 1 minute.
