1/2 medium Sweet Potato
1/4 cup diced Red Bell Pepper
1/4 cup diced Yellow Onion

1 tbsp Mixed Fresh Herbs (Rosemary & Thyme)
1 clove Garlic, minced
Salt and Pepper to taste
PREPARATION
Slice the sweet potato into small cubes and dice the red bell pepper and yellow onion. Mince the garlic and chop the fresh herbs.
