Spicy Lime Steak Quesadillas with Bell Peppers
Enjoy tender strips of juicy steak marinated in a zesty lime and spice blend, paired with sautéed bell peppers and melty cheese, all tucked inside whole wheat tortillas for a satisfying, flavor-packed meal.
INGREDIENTS
4 oz Steak
1 Whole Wheat Tortilla
1 medium Red Bell Pepper
1/4 cup Low-Fat Cheddar Cheese (shredded)
2 tbsp Fresh Lime Juice
1 tsp Chili Powder
1 tsp Cumin
Pinch of Salt
1 tsp Olive Oil
PREPARATION
In a bowl, toss the steak strips with lime juice, chili powder, cumin, and a pinch of salt. Let marinate for about 15 minutes.
Heat olive oil in a skillet over medium-high heat. Add the marinated steak and cook until browned and just done, about 3-4 minutes per side. Remove from the skillet and set aside.
In the same skillet, add sliced red bell pepper and sauté until tender, about 3-4 minutes.
Lay the whole wheat tortilla flat on a clean surface. Sprinkle half of the shredded cheese over one half of the tortilla. Top with the cooked steak and bell peppers, then sprinkle the remaining cheese on top.
Fold the tortilla over to create a quesadilla. Return it to the skillet over medium heat. Cook for 2-3 minutes on each side until the tortilla is golden and the cheese is melted.
Remove from heat, slice into wedges, and serve warm.
