150 g Sweet Potato
100 g Green Beans
1 tbsp Extra Virgin Olive Oil
2 tbsp Fresh Herbs (parsley, dill, or thyme)
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Place the cod fillet on a baking dish lined with parchment paper. Drizzle with half of the olive oil, sprinkle with chopped fresh herbs, lemon juice, salt, and pepper.
Bake the cod in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.
Meanwhile, peel and dice the sweet potato into small cubes. Boil in a pot of lightly salted water until soft, about 10-12 minutes.
Once tender, drain the sweet potato and mash it with the remaining olive oil, a pinch of salt, and pepper until smooth.
Steam the green beans over boiling water for 4-5 minutes until they are tender yet crisp.
