150g Potato
0.75 cup Plain Nonfat Greek Yogurt
0.5 cup Cannellini Beans
0.5 head Roasted Garlic

1 tbsp Fresh Chives
PREPARATION
Preheat your oven to 400°F. Slice the top off a head of garlic, drizzle with a little olive oil, wrap in foil, and roast for about 30-35 minutes until soft and caramelized.
While the garlic roasts, steam the cauliflower florets and diced potato until very tender, about 12-15 minutes.
Drain the cannellini beans and set aside.
Place the steamed cauliflower, potato, cannellini beans, and roasted garlic (squeeze the soft garlic cloves out) in a large bowl. Add the Greek yogurt and olive oil.
Mash everything together until smooth and creamy. Season with salt and pepper to taste.
