While the mushrooms are roasting, season the chicken breast with salt and pepper. Heat a non-stick skillet over medium-high heat and sear the chicken breast for approximately 5-6 minutes per side, or until fully cooked.
Slice the chicken breast into strips and serve alongside or atop the roasted mushrooms.
