INGREDIENTS
1 cup Pumpkin Puree (245g)
4 scoops Whey Protein Isolate (120g total)
2 large Whole Eggs
1 large Egg White
0.75 cup Ground Rolled Oats Flour (60g)
0.5 cup Unsweetened Almond Milk (120g)
2 tablespoons Maple Syrup (40g)
1 teaspoon Baking Powder (4g)
1 teaspoon Pumpkin Spice (2.3g)
2 tablespoons Coconut Oil, melted (28g)
PREPARATION
Preheat your oven to 350°F and lightly grease a donut pan with a little coconut oil.
In a large bowl, whisk together the pumpkin puree, whole eggs, and egg white until well combined.
Stir in the maple syrup and melted coconut oil.
In another bowl, mix the ground oats (flour), whey protein powder, baking powder, and pumpkin spice.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Slowly pour in the almond milk to reach a smooth, batter-like consistency.
Spoon the batter into the prepared donut pan, filling each cavity nearly to the top.
Bake for 15-18 minutes or until a toothpick inserted into a donut comes out clean.
Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack. Enjoy warm or at room temperature.
