4 cups Vegetable Broth
1 tsp Olive Oil
1 tbsp Fresh Thyme, chopped
1 tbsp Fresh Parsley, chopped
1 Bay Leaf
Salt & Pepper to taste
PREPARATION
Rinse the dry lentils under cold water and set aside.
In a large pot, heat the olive oil over medium heat. Sauté the chopped onion, celery, carrot, and minced garlic until softened, about 5-7 minutes.
Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Stir well.
Place the bay leaf in the soup and sprinkle in the fresh thyme. Bring the mixture to a boil.
Once boiling, reduce the heat to a simmer and cook for about 25-30 minutes until the lentils are tender.
Add the canned white beans and continue to simmer for an additional 5 minutes to heat through.
Season with salt and pepper to taste, then remove the bay leaf.
