Enjoy a light yet nourishing dinner featuring perfectly seared salmon, complemented by crisp steamed green beans and a creamy cauliflower mash enhanced with a touch of olive oil. This dish offers elegant simplicity with vibrant green hues and a rich, savory flavor profile.
INGREDIENTS
7 oz Salmon Fillet
1 cup Steamed Green Beans
1 cup Cauliflower (for mash)
1 tsp Olive Oil
1 Garlic Clove (minced)
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, carefully place the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook the other side for an additional 3-4 minutes until the fish is just cooked through. Remove from heat and set aside.
In a steamer or a pot with a steaming basket, add the green beans and steam for about 4-5 minutes until tender-crisp.
Meanwhile, chop the cauliflower into florets and steam or boil until very tender, approximately 8-10 minutes.
Drain the cauliflower and transfer it to a bowl. Add 1 teaspoon olive oil, the minced garlic, a pinch of salt and pepper, and mash until smooth but still retaining some texture.
Plate the seared salmon alongside the steamed green beans and a generous serving of cauliflower mash. Serve immediately and enjoy!
