INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Extra Virgin Olive Oil
1 clove Garlic
Salt & Black Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat. When hot, sear the salmon skin-side down (if applicable) for about 3-4 minutes, then flip and cook for another 3-4 minutes until cooked through but still moist.
While the salmon is searing, steam the green beans in a steamer basket over boiling water for 4-5 minutes until tender-crisp.
Break the cauliflower into florets and steam for about 8-10 minutes until very soft.
In a bowl, mash the steamed cauliflower with the minced garlic and 1 teaspoon of extra virgin olive oil until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed green beans and a generous serving of garlic mashed cauliflower. Serve immediately.
