Enjoy a light and flavorful dinner featuring a perfectly seared salmon fillet paired with tender, steamed asparagus and a fragrant herb-infused rice. This dish harmoniously blends vibrant herbs and fresh produce with succulent salmon, making it a balanced meal for a nourishing evening reprieve.
INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1/2 cup Cooked White Rice
2 tbsp Fresh Mixed Herbs (Parsley, Dill)
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes per side until a golden crust forms and the flesh is just cooked through.
While the salmon is searing, steam the asparagus in a steamer or in a microwave with a splash of water for about 3-4 minutes until tender but still crisp.
Prepare the herb rice by gently folding the fresh mixed herbs and lemon juice into the pre-cooked white rice. Season lightly with a pinch of salt.
Plate the seared salmon alongside the steamed asparagus and a serving of herbed rice. Drizzle any remaining lemon juice over the salmon if desired and serve immediately.
