INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
2 tbsp Non-Fat Greek Yogurt
0.5 tbsp Olive Oil (for mash)
0.5 tbsp Olive Oil (for salmon)
PREPARATION
Pat dry the salmon fillet and season lightly with salt and pepper.
Heat a non-stick pan over medium-high heat and add 0.5 tablespoon of olive oil. Sear the salmon skin-side down for 3-4 minutes, then flip and cook for an additional 3-4 minutes until cooked to desired doneness.
Meanwhile, steam the asparagus until tender, about 4-5 minutes.
In a small saucepan, steam the cauliflower florets for around 6-8 minutes until soft.
Transfer the steamed cauliflower to a bowl, add 2 tablespoons of non-fat Greek yogurt and 0.5 tablespoon of olive oil, then blend or mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve warm.
