INGREDIENTS
160g Wild Salmon Fillet
1 cup Green Beans (125g)
1.5 cups Cauliflower (160g)
2 tsp Olive Oil
2 cloves Garlic
Salt & Black Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and black pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil.
Sear the salmon for about 3-4 minutes per side until a golden crust forms and the center reaches your preferred doneness.
Meanwhile, steam the green beans until just tender, about 4-5 minutes, then toss with a drizzle of olive oil, minced garlic, and a pinch of salt.
For the cauliflower mash, steam the cauliflower florets until soft, about 8-10 minutes, then blend with a little salt, pepper, and if desired a splash of water or extra virgin olive oil to achieve a creamy consistency.
Plate the seared salmon alongside the garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
