PREPARATION
Rinse and drain the white beans if using canned beans.
Dice the carrot, celery, and onion. Mince the garlic.
In a large pot, add the vegetable broth and bring it to a simmer over medium heat.
Add the diced onion and minced garlic to the broth. Let it simmer for 2-3 minutes until the onion softens slightly.
Add the carrot and celery. Continue to simmer for another 5 minutes until the vegetables start to become tender.
Stir in the diced tomatoes, white beans, and fresh thyme and rosemary.
Allow the stew to simmer for 10-15 minutes so the flavors meld.
