INGREDIENTS
4 oz Lean Ground Turkey
1 medium Sweet Potato
1/4 cup Chopped Yellow Onion
1/4 medium Red Bell Pepper
1 tsp Olive Oil
1 large Egg
1 large Egg White
1 tsp Ground Cumin
1 tsp Ground Coriander
1/2 tsp Paprika
1/2 tsp Ground Turmeric
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Finely chop the yellow onion and red bell pepper.
Heat olive oil in a non-stick skillet over medium heat. Add the chopped onion and bell pepper and sauté until softened, about 3-4 minutes.
Add the lean ground turkey to the skillet. Break it up with a spatula and cook until it begins to brown.
Stir in the diced sweet potato along with ground cumin, ground coriander, paprika, ground turmeric, salt, and pepper. Continue cooking, stirring occasionally, until the sweet potato is tender and the turkey is fully cooked, about 8-10 minutes.
In a small bowl, whisk together the whole egg and egg white. Pour the egg mixture over the hash, stirring gently to combine and allow the eggs to set.
Cook for an additional 2-3 minutes until the eggs are fully cooked and the flavors meld together. Taste and adjust seasonings as necessary.
Serve hot, garnished with an extra sprinkle of black pepper if desired.
