INGREDIENTS
4 oz Ground Chicken (lean)
1 Large Egg
1/2 Medium Sweet Potato (diced, ~75g)
1/2 cup Diced Red Bell Pepper
1/4 small Yellow Onion (diced)
1 cup Fresh Spinach
1 tsp Olive Oil
PREPARATION
Heat a non-stick skillet over medium heat and add the olive oil.
Add the diced yellow onion and red bell pepper to the skillet. Sauté until they begin to soften, about 3-4 minutes.
Add the ground chicken to the skillet. Break it up with a spatula and cook until it is mostly browned.
Stir in the diced sweet potato. Continue to cook until the sweet potato is tender, about 5-6 minutes. If needed, cover the skillet for a few minutes to help in softening.
Mix in the fresh spinach and allow it to wilt, stirring occasionally.
Create a small well in the hash and crack the egg into it. Cover the pan and let the egg cook to your desired doneness, about 3-4 minutes for a runny yolk or longer for firmer whites.
Season with salt and pepper as desired, and serve hot.
