Enjoy a beautifully balanced dinner featuring perfectly seared salmon paired with tender steamed asparagus, and a creamy garlic-infused cauliflower mash. A delightful and light meal that harmonizes vibrant flavors with a clean presentation.
INGREDIENTS
6 oz Salmon Fillet
5 Asparagus Spears
1 cup Cauliflower florets
0.5 tbsp Olive Oil
0.5 tbsp Unsalted Butter
2 Garlic Cloves
0.25 cup Nonfat Greek Yogurt
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper. Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down in the skillet and sear for about 3-4 minutes until the skin is crisp. Flip and cook for another 3-4 minutes until cooked through, adjusting time based on thickness.
Meanwhile, steam the asparagus spears in a steamer basket over boiling water for 4-5 minutes until tender yet still crisp. Season lightly with salt.
For the cauliflower mash, steam the cauliflower florets along with garlic cloves until soft, about 8-10 minutes.
Transfer the steamed cauliflower and garlic into a blender. Add the nonfat Greek yogurt and butter. Blend until smooth and creamy. Adjust seasoning with salt and pepper as needed.
Plate the seared salmon with a side of steamed asparagus and a generous scoop of garlic cauliflower mash. Serve warm and enjoy!
