INGREDIENTS
4 oz Lean Ground Turkey
1 large Bell Pepper
1/2 cup Cauliflower Rice
1/4 cup Diced Tomato
1 oz Diced Onion
1 tsp Olive Oil
1/8 cup Shredded Low-Fat Cheddar Cheese
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Cut the top off the large bell pepper and remove seeds and membranes. Set aside the pepper and, if desired, chop the removed parts to add into the filling.
In a skillet over medium heat, add olive oil and sauté the diced onion (and optional chopped bell pepper pieces) until translucent, about 3-4 minutes.
Add the lean ground turkey to the skillet and cook until browned and fully cooked, breaking it up with a spoon as it cooks.
Mix in the cauliflower rice and diced tomato. Season with salt and pepper, and let the mixture cook together for an additional 2-3 minutes until flavors meld.
Spoon the turkey and vegetable mixture into the hollowed out bell pepper. Top with shredded low-fat cheddar cheese.
Place the stuffed bell pepper in a baking dish and bake in the preheated oven for 20-25 minutes, or until the pepper is tender and the cheese is slightly melted.
Remove from oven and let cool for a few minutes before enjoying your hearty, nutrient-packed meal.
