INGREDIENTS
300g Extra Firm Tofu
100g Shelled Edamame
50g Red Bell Pepper
3 Egg Whites (approx. 99g)
1 Tbsp Low-Sodium Soy Sauce
1 tsp Fresh Ginger, minced
1 Garlic clove, minced
1 tsp Olive Oil
PREPARATION
Press the tofu for 10 minutes to remove excess moisture and cut into cubes.
Heat olive oil in a non-stick pan over medium-high heat. Add minced garlic and ginger; sauté until fragrant.
Add the tofu cubes and sear until golden on all sides, about 5-7 minutes.
Stir in the shelled edamame and red bell pepper slices; sauté for another 3-4 minutes until the vegetables are tender but still crisp.
Push the tofu and vegetables to one side of the pan and pour in the egg whites, stirring gently to scramble and combine with the stir fry.
Drizzle the low-sodium soy sauce over the mixture and stir well to coat all ingredients. Cook for an additional minute.
Serve hot and enjoy your protein-packed, clean dinner.
