6 oz Wild Salmon Fillet
1 cup Green Beans
1 tsp Olive Oil
1 Garlic Clove
150 g Sweet Potato
1 tsp Unsalted Butter
Salt & Pepper to taste
PREPARATION
Season the salmon fillet lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil.
Place the salmon skin-side down (if skin-on) and sear for about 3-4 minutes per side until golden and cooked to your desired doneness. Remove and rest.
Meanwhile, peel (if desired), cube the sweet potato, and boil it in water until tender, about 10-12 minutes.
Drain the sweet potato and mash it with the butter, a pinch of salt, and pepper until smooth.
In a separate pan, heat the remaining olive oil over medium heat, add the minced garlic from the garlic clove and sauté until fragrant, then add the green beans. Sauté for about 5-7 minutes until they are tender but still crisp.
