INGREDIENTS
80g Halloumi Cheese
1 small Whole Wheat Bun (40g)
1 large Egg White (33g)
100g Sweet Potato
50g Nonfat Greek Yogurt
30g Tomato
20g Lettuce
1 clove Garlic
1 tsp Dried Mixed Herbs (oregano, thyme, dill)
1 tsp Olive Oil
PREPARATION
Preheat the oven to 425°F (220°C).
Cut the sweet potato into fry-like sticks. In a bowl, toss with minced garlic, dried herbs, olive oil, salt, and pepper.
Spread the sweet potato fries evenly on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through, until crispy and tender.
While fries bake, slice the halloumi cheese into 1/2 inch thick pieces. Pat dry with a paper towel.
Heat a non-stick skillet over medium heat. Lightly cook the halloumi slices for 2-3 minutes on each side until a golden crust is formed.
In the same skillet, pour in the egg white and gently swirl to create a thin layer, cooking briefly to set.
For the tzatziki sauce, mix nonfat Greek yogurt with a pinch of salt, pepper, and a few extra dried herbs if desired.
Assemble the burger by placing the cooked halloumi on the whole wheat bun, topping with the egg white layer, fresh lettuce, and tomato slices. Drizzle a little tzatziki sauce atop.
Serve the assembled burger alongside a generous portion of crispy baked garlic herb sweet potato fries.
