Enjoy a vibrant meal featuring tender garlic herb roasted chicken paired with crispy green bean fries. The juicy chicken breast is marinated in fresh garlic, rosemary and thyme, then roasted to perfection. The green bean fries are lightly coated in egg white and panko breadcrumbs and baked to achieve a delightful crunch without excess oil.
INGREDIENTS
6 oz Chicken Breast, Skinless
1 cup Green Beans
1/4 cup Panko Breadcrumbs
1 Egg White
1 tsp Olive Oil
2 cloves Garlic
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
In a small bowl, mix minced garlic, chopped rosemary, thyme, a pinch of salt and pepper, and olive oil.
Rub the herb mixture evenly over the chicken breast.
Place the chicken on a baking sheet and roast in the oven for 20-25 minutes, or until the internal temperature reaches 165°F.
While the chicken roasts, trim the green beans and prepare a shallow bowl with the egg white. In another bowl, place the panko breadcrumbs and season with a pinch of salt and pepper.
Dip the green beans first in the egg white, then coat evenly with the panko breadcrumbs.
Place the breaded green beans on a separate baking sheet lined with parchment paper. Bake in the oven during the last 10-12 minutes of the chicken roasting time until crispy and golden.
Once both components are done, slice the chicken and serve with the crispy green bean fries on the side.
