INGREDIENTS
4 ounces Chicken Breast
1/2 cup cooked Whole Wheat Pasta
1 cup Fresh Basil Leaves
1 teaspoon Olive Oil
1 clove Garlic
1 tablespoon Parmesan Cheese
1 cup Cherry Tomatoes
Salt and Pepper, to taste
PREPARATION
Season the chicken breast with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add a light drizzle of olive oil.
Place the chicken breast in the skillet and cook for about 4-5 minutes per side, until the outside is crispy and the inside is cooked through. Remove and let rest before slicing.
In the same skillet, reduce the heat to medium and add the garlic. Sauté for about 30 seconds until fragrant.
Add the fresh basil leaves and olive oil, then blend in a small food processor or muddle in a bowl until a rough pesto forms. Stir in the Parmesan cheese.
Toss the cooked whole wheat pasta in the basil pesto until evenly coated.
Slice the chicken breast and serve on top of the pesto pasta, garnishing with whole cherry tomatoes.
Finish with an extra sprinkle of salt and pepper to taste.
