1/4 cup Diced Red Onion (40g)
0.5 oz Goat Cheese (14g)
1 tsp Olive Oil (5g)
1 tbsp Fresh Herbs (Parsley & Basil)

PREPARATION
Preheat your oven to 400°F.
Arrange the diced bell pepper, sliced zucchini, and diced red onion on a baking tray. Drizzle with olive oil, season with salt and pepper, and roast in the oven for about 10 minutes until tender.
In a bowl, whisk together the eggs, and season with a pinch of salt and pepper.
