1/3 cup dry orzo (≈50g)
1 teaspoon olive oil
1/2 lemon, juiced
1 garlic clove, minced
1/3 cup low-sodium chicken broth
2 tbsp chopped fresh parsley
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Pat the chicken thigh dry with paper towels and season generously with salt and pepper.
Heat a cast iron skillet over medium-high heat. Add the olive oil and once shimmering, place the chicken thigh skin-side down. Sear for about 4-5 minutes until the skin is golden and crispy.
