Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy tender, seared salmon paired with crisp steamed asparagus and a creamy cauliflower mash enriched with a touch of nonfat Greek yogurt and a hint of olive oil. This dish brings a harmony of flavors and textures in a light, satisfying dinner.
INGREDIENTS
5.5 oz Salmon Fillet
100g Asparagus
150g Cauliflower
1/3 cup Nonfat Greek Yogurt
1 tsp Olive Oil
Salt and Pepper to taste
1 Lemon wedge
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add olive oil. Once heated, sear the salmon skin-side down (if applicable) for about 3-4 minutes, then flip and cook for an additional 3 minutes or until cooked through.
While the salmon cooks, steam the asparagus until just tender, about 4-5 minutes.
In a pot, steam the cauliflower florets for 8-10 minutes until soft.
Transfer the steamed cauliflower to a blender or bowl and blend/mash with nonfat Greek yogurt. Season with a pinch of salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve with a lemon wedge for an extra burst of freshness.
