1/2 cup Black Beans, canned and drained (~130g)
1/4 cup Rolled Oats (~20g)
1 large Egg
3 ounces Extra Firm Tofu (~85g)
1/4 cup Nonfat Plain Greek Yogurt (~60g)
1 cup Fresh Spinach (~30g)
1 teaspoon Olive Oil
Spice Mix (Cumin, Smoked Paprika, Salt, Pepper) to taste
PREPARATION
Preheat oven to 400°F.
Pierce the sweet potato with a fork and microwave on high for about 5-6 minutes until soft. Allow to cool slightly, then peel and mash in a bowl.
In a separate bowl, drain and roughly mash the black beans.
Combine the mashed sweet potato, black beans, rolled oats, and spice mix. Stir in the egg and crumbled extra firm tofu until well mixed.
Form the mixture into patties. If the mixture feels too loose, add a little more oats to bind.
Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes per side until golden brown and heated through.
