INGREDIENTS
6 oz Salmon Fillet
1 small Sweet Potato (approx 100g)
6 spears Asparagus (approx 100g)
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Wash the sweet potato and asparagus. Pierce the sweet potato a few times with a fork.
Place the sweet potato on a baking sheet and roast in the oven for about 35-40 minutes, until tender.
Meanwhile, season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add the salmon, skin-side down if applicable. Sear for 3-4 minutes on each side until a crust forms and the salmon is nearly cooked through.
Toss the asparagus with olive oil, salt, and pepper, then add to the baking sheet during the last 10 minutes of the sweet potato’s roasting time to ensure they become tender and slightly charred.
Plate the seared salmon alongside slices of roasted sweet potato and asparagus spears.
Finish with an extra light drizzle of olive oil over the top for added flavor if desired.
