200g Asparagus
300g Cauliflower
0.75 cup Nonfat Greek Yogurt (170g)
0.5 tbsp Olive Oil (7g)
1 clove Garlic
1/2 Lemon
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Trim the asparagus and toss with half of the olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for 12-15 minutes until tender and slightly crispy.
Meanwhile, steam or boil the cauliflower florets until very tender, about 8-10 minutes. Reserve a small splash of the cooking water.
In a blender or food processor, combine the cooked cauliflower, nonfat Greek yogurt, garlic, and a little of the reserved water. Blend until smooth and season with salt and pepper to taste, creating a creamy garlic mash.
Pat the salmon dry and season both sides with salt and pepper. Heat the remaining olive oil in a skillet over medium-high heat. Place the salmon skin-side down (if applicable) and sear for about 4 minutes on each side or until cooked to your liking.
