1.5 cups cooked red lentils (300g)
0.25 cup rolled oats (20g)
0.25 medium onion (25g)
1 garlic clove
0.5 tbsp ground flaxseed (with water to form flax egg)
1 tbsp tomato paste
1 tbsp nutritional yeast
1 tsp olive oil
Spices: dried basil, dried oregano, salt & pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, combine 0.5 tablespoon of ground flaxseed with 1.5 tablespoons of water to create a flax egg. Set aside for 5 minutes.
Place the cooked red lentils, rolled oats, chopped onion, garlic, tomato paste, nutritional yeast, and the prepared flax egg in a food processor. Pulse until the mixture is well combined but still retains some texture.
Transfer the mixture into a bowl and add a sprinkle of dried basil, dried oregano, salt, and pepper. Mix thoroughly with your hands until the seasonings are evenly distributed.
Form the mixture into 8 small meatballs. For extra crispiness, lightly brush or spray the meatballs with olive oil.
