INGREDIENTS
200g Extra Firm Tofu
1 tbsp Cornstarch
1 tbsp Natural Peanut Butter
1/2 tsp Low Sodium Soy Sauce
1/2 tsp Rice Vinegar
1 cup Steamed Broccoli
1/2 cup Shelled Edamame
1 tbsp Water
Salt & Pepper to taste
PREPARATION
Press the tofu to remove excess moisture for at least 15 minutes, then cut it into bite-sized cubes.
Preheat your oven to 400°F (200°C). In a bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated.
Place the tofu on a lined baking sheet and bake for 25-30 minutes, turning halfway through, until the cubes are golden and crispy.
Meanwhile, prepare the peanut sauce by whisking together the peanut butter, low sodium soy sauce, rice vinegar, and water until smooth. Adjust seasoning if needed.
Steam the broccoli until tender, about 5-7 minutes, and lightly season with salt and pepper.
Steam or microwave the shelled edamame until heated through.
Assemble your plate by arranging the steamed broccoli and edamame. Drizzle the peanut sauce over the crispy baked tofu just before serving, and garnish with extra pepper if desired.
