INGREDIENTS
4 oz Salmon Fillet
1/2 cup dry Whole Wheat Pasta
1/4 cup Half-and-Half
Juice of 1/2 Lemon
1 clove Garlic
1 tsp Olive Oil
1 tbsp Fresh Parsley
Salt & Pepper to taste
PREPARATION
Bring a pot of salted water to a boil and add the whole wheat pasta. Cook according to package instructions until al dente, then drain and set aside.
Season the salmon fillet with salt and pepper on both sides.
Heat the olive oil in a non-stick skillet over medium-high heat. Add the salmon, skin side down if applicable, and sear for about 3-4 minutes until a golden crust forms.
Carefully flip the salmon and cook for an additional 3-4 minutes, or until the fish reaches your preferred doneness. Remove the salmon from the pan and keep warm.
In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn.
Pour in the half-and-half and add the lemon juice, stirring to combine. Let the sauce simmer for 1-2 minutes to slightly thicken, then adjust with salt and pepper if needed.
Add the drained pasta to the skillet, tossing to coat it evenly with the creamy lemon garlic sauce.
Plate the pasta and top with the pan-seared salmon. Garnish with freshly chopped parsley and serve immediately.
