INGREDIENTS
6 oz Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
2 tbsp Olive Oil
3 cloves Garlic
Salt & Pepper to taste
PREPARATION
Preheat a skillet over medium-high heat and add 1 tablespoon of olive oil.
Season the salmon fillet with salt and pepper.
Place the salmon in the skillet skin-side down if applicable, and sear for about 3-4 minutes on each side until a golden crust forms and the salmon is nearly cooked through.
While the salmon cooks, peel and dice the sweet potato into cubes. Boil in a pot of water until tender, about 10-12 minutes.
In another pan, heat the remaining olive oil and add finely chopped garlic. Sauté briefly until fragrant, then add trimmed green beans. Sauté for 4-5 minutes until the beans are tender but still crisp.
Drain the sweet potato and mash it with a fork or potato masher. Season with a pinch of salt and pepper.
Plate the salmon alongside a serving of sweet potato mash and garlic green beans. Serve warm and enjoy!
