INGREDIENTS
120g Lamb Shoulder (lean, trimmed)
100g Sweet Potato
30g Dried Apricots
1 tsp Olive Oil
1 clove Garlic
1 tsp Ground Cumin
1 tsp Ground Coriander
0.5 tsp Ground Cinnamon
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Cut the sweet potato into 1/2-inch cubes and roughly chop the dried apricots. Set aside.
In a small bowl, mix together ground cumin, ground coriander, ground cinnamon, salt, and black pepper.
Pat the lamb dry and rub it with the spice mix.
Heat the olive oil in an oven-safe skillet over medium-high heat. Sauté the minced garlic until aromatic, about 30 seconds.
Add the spiced lamb to the skillet and sear on all sides until browned, about 2-3 minutes per side.
Add the sweet potatoes and dried apricots to the skillet, stirring to combine with the lamb and garlic.
Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the lamb reaches your desired doneness and the sweet potatoes are tender.
Remove from the oven, let rest for a few minutes, and serve warm.
