6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 clove Garlic
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add the salmon skin-side down first and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until the fish is done to your liking.
While the salmon is cooking, prepare the asparagus by rinsing and trimming the woody ends. Steam the asparagus in a steamer for about 4-5 minutes until tender but still crisp.
For the garlic mashed cauliflower, steam the cauliflower florets along with a clove of garlic until soft, approximately 8-10 minutes.
Transfer the steamed cauliflower and garlic into a blender or use a hand masher. Add 1 tsp of olive oil, a pinch of salt and pepper, and blend or mash until you achieve a creamy consistency.
